Rhubarb Upside Down Cake I Recipe
This simple recipe makes a lovely upside-down cake with rhubarb and marshmallows using a cake mix.

Ingredients:
- 3 cups miniature marshmallows
- 1 cup white sugar
- 1 (18.25 ounce) package yellow cake mix
- 6 cups chopped rhubarb
Directions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Preheat the oven to 350°F and grease a 9x13-inch baking pan.
- In a greased 9x13 inch pan, layer chopped rhubarb on the bottom. Evenly sprinkle sugar over the rhubarb. Place marshmallows on top of the rhubarb and sugar.
- Prepare the cake mix according to the package directions. In the pan, pour over the rhubarb and marshmallows.
- Preheat oven to 350 degrees F (175 degrees C) and bake for 1 hour. Cool for 10 minutes in the pan before inverting onto a serving plate with the rhubarb on top.
