This simple recipe makes a lovely upside-down cake with rhubarb and marshmallows using a cake mix.

Ingredients:

  • 3 cups miniature marshmallows
  • 1 cup white sugar
  • 1 (18.25 ounce) package yellow cake mix
  • 6 cups chopped rhubarb

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Preheat the oven to 350°F and grease a 9x13-inch baking pan.
  2. In a greased 9x13 inch pan, layer chopped rhubarb on the bottom. Evenly sprinkle sugar over the rhubarb. Place marshmallows on top of the rhubarb and sugar.
  3. Prepare the cake mix according to the package directions. In the pan, pour over the rhubarb and marshmallows.
  4. Preheat oven to 350 degrees F (175 degrees C) and bake for 1 hour. Cool for 10 minutes in the pan before inverting onto a serving plate with the rhubarb on top.
