This salad is perfect for summertime meals, particularly barbeques!

Carmel's Crunchy Pea Salad

Ingredients:

  • 8 slices bacon
  • ½ cup chopped celery
  • ⅔ cup sour cream
  • 1 cup chopped cashews
  • 1 (10 ounce) package frozen green peas, thawed and drained
  • salt and pepper to taste
  • ½ cup chopped green onions

Directions:

  1. In a big, deep skillet, cook the bacon. Cook until uniformly browned over medium-high heat. Drain, crumble, and place on a plate.
  2. Combine peas, celery, scallions, and sour cream in a medium mixing basin. To combine the ingredients, gently toss them together.
  3. Add the cashews and bacon to the salad just before serving. Salt & pepper to taste.
