Carmel's Crunchy Pea Salad Recipe
This salad is perfect for summertime meals, particularly barbeques!

Ingredients:
- 8 slices bacon
- ½ cup chopped celery
- ⅔ cup sour cream
- 1 cup chopped cashews
- 1 (10 ounce) package frozen green peas, thawed and drained
- salt and pepper to taste
- ½ cup chopped green onions
Directions:
- In a big, deep skillet, cook the bacon. Cook until uniformly browned over medium-high heat. Drain, crumble, and place on a plate.
- Combine peas, celery, scallions, and sour cream in a medium mixing basin. To combine the ingredients, gently toss them together.
- Add the cashews and bacon to the salad just before serving. Salt & pepper to taste.
