Potato Salad Dressing I Recipe

This will give your spud salad a kick. In a mixing bowl, combine this dressing with an equal amount of creamy salad dressing.

Potato Salad Dressing I

Ingredients:

  • ¼ cup white wine vinegar
  • 2 eggs, beaten
  • ½ teaspoon mustard powder
  • ¼ cup creamy salad dressing (e.g. Miracle Whip)
  • ¼ cup water
  • ¾ cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon butter

Directions:

  1. Combine the dry mustard, flour, butter, eggs, sugar, water, and vinegar in a saucepan. Cook, stirring frequently, over medium-high heat until thick and smooth. Add up to 1 tablespoon more flour if necessary. Allow to cool before serving.
  2. Combine one part chilled dressing and one part creamy salad dressing in a blender. Toss cooked potatoes in enough dressing to coat.
