Chocolate Oatmeal Hermits

Ingredients:

  • ¼ cup white sugar
  • ¼ cup vegetable oil
  • ⅛ teaspoon salt
  • ⅓ cup mini semi-sweet chocolate chips
  • 2 teaspoons vanilla extract
  • ⅓ cup packed brown sugar
  • 2 egg whites
  • ½ teaspoon baking powder
  • 1 ½ cups quick cooking oats
  • ¾ cup all-purpose flour

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Spray the pan with vegetable oil.
  2. Using an electric mixer, beat together the sugar, brown sugar, vegetable oil, egg whites, and vanilla in a medium mixing dish. Sift the flour, baking powder, and salt together and fold them into the creamed mixture. Stir in the fast cooking oats and chocolate chips using a wooden spoon.
  3. Drop dough by level tablespoonfuls onto the cookie sheet that has been prepared. Preheat the oven to 350°F and bake for 8 to 10 minutes. Cool on wire racks after removing from baking sheets.
