Mediterranean Potato Salad Recipe
This is a tasty alternative to classic potato salad. It's light and refreshing, and it's a hit at potlucks!

Ingredients:
- 1 lemon, juiced
- ½ cup sliced red onion
- salt and pepper to taste
- 8 ounces crumbled feta cheese
- 3 pita breads, cut into wedges
- 2 pounds potatoes
- 1 green bell pepper, minced
- ½ cup Italian-style salad dressing
- 1 cucumber, sliced and quartered
Directions:
- A big saucepan of salted water should be brought to a boil. Cook, stirring occasionally, until the potatoes are cooked but still firm, about 15 minutes. Afterwards, drain, chill, and chop.
- Combine the potatoes, green peppers, cucumbers, red onion, and cheese in a large mixing basin.
- Combine the lemon juice, salad dressing, salt, and pepper in a mixing bowl. Toss the salad in the dressing to coat it. If desired, serve with pita bread wedges.
