Mediterranean Potato Salad Recipe

This is a tasty alternative to classic potato salad. It's light and refreshing, and it's a hit at potlucks!

Mediterranean Potato Salad

Ingredients:

  • 1 lemon, juiced
  • ½ cup sliced red onion
  • salt and pepper to taste
  • 8 ounces crumbled feta cheese
  • 3 pita breads, cut into wedges
  • 2 pounds potatoes
  • 1 green bell pepper, minced
  • ½ cup Italian-style salad dressing
  • 1 cucumber, sliced and quartered

Directions:

  1. A big saucepan of salted water should be brought to a boil. Cook, stirring occasionally, until the potatoes are cooked but still firm, about 15 minutes. Afterwards, drain, chill, and chop.
  2. Combine the potatoes, green peppers, cucumbers, red onion, and cheese in a large mixing basin.
  3. Combine the lemon juice, salad dressing, salt, and pepper in a mixing bowl. Toss the salad in the dressing to coat it. If desired, serve with pita bread wedges.
