Spanish Rice Chicken I Recipe
This recipe is really quick and easy to prepare. It's ideal for preparing in the galley of a recreational vehicle (RV) for a quick and delicious dinner on the road! Andale, of course!

Ingredients:
- 1 (6.8 ounce) package Spanish-style rice mix
- 1 tablespoon butter
- 2 cups hot water
- 1 skinless, boneless chicken breast half - cut into cubes
- 1 cup salsa
- 1 (14.5 ounce) can diced tomatoes with green chile peppers
Directions:
- Prepare rice according to package directions in a large skillet over medium heat, browning the vermicelli and rice to a golden brown with the butter/margarine. Bring the water, chicken, salsa, and tomatoes to a boil together. Cover skillet, lower heat to low, and cook for 25 to 30 minutes, or until all liquid has been absorbed.
