Vermicelli Salad Recipe

This is a delicious light salad that is simple to prepare. I use farmer's market tomatoes, which give the salad a unique 'fresh' flavor. It's a hit with my family.

Vermicelli Salad

Ingredients:

  • 2 tablespoons salad seasoning mix
  • 8 ounces vermicelli pasta
  • 1 (6 ounce) can sliced black olives
  • ½ cup chopped green bell pepper
  • 1 tomato, chopped
  • ½ cup chopped red onion
  • ½ cup zesty Italian dressing

Directions:

  1. Cook pasta till al dente in a large pot of salted boiling water, then rinse under cold water and drain.
  2. Combine the spaghetti, tomato, bell pepper, olives, and onion in a large mixing basin.
  3. Combine the salad spice mix and the zesty salad dressing in a mixing bowl. Pour over salad and gently stir. To combine flavors, chill for 4 hours or overnight.
