Quesadillas I Recipe

A cheesy, tasty pre-dinner snack. I prefer to prepare quesadillas without butter, although you might do so before placing the tortilla in the frying pan. Serve with salsa and sour cream.

Ingredients:

  • 2 avocados - peeled, pitted and sliced
  • 10 (6 inch) corn tortillas
  • 2 teaspoons hot pepper sauce
  • 1 (2 ounce) can sliced black olives
  • 2 cups shredded mozzarella cheese

Directions:

  1. Over medium heat, heat a large frying pan or griddle. One tortilla should be placed flat on the frying pan. Flip the tortilla after 1 minute. On the tortilla, spread a little more than 1/4 cup cheese, then top with olives, avocado, and hot pepper sauce. To make a sandwich, place another tortilla on top. Using a lid, cover the quesadilla. Flip the quesadilla after one minute. Remove the quesadilla once the cheese has melted on the interior. Rep with the rest of the ingredients.
  2. Serve the quesadillas cut into triangles.
