Ingredients:
- 3 cups bread flour
- 1 tablespoon cornmeal
- 1 cup warm water (110 degrees F/45 degrees C)
- 3 tablespoons white sugar
- 1 egg white
- 1 ½ teaspoons salt
- 2 ¼ teaspoons active dry yeast
- 3 quarts boiling water
- 2 tablespoons white sugar
- 3 tablespoons poppy seeds
Directions:
- In the bread machine pan, add the water, salt, sugar, flour, and yeast in the sequence indicated by the manufacturer. Select the Dough option.
- Allow dough to rest on a lightly floured surface once the cycle is finished. Meanwhile, bring 3 quarts of water to a boil in a big kettle. 3 tablespoons sugar, stirred in
- Make 9 little balls out of the dough by cutting it into 9 equal parts. Make the balls as flat as possible. With your thumb, poke a hole in the middle of each. To enlarge the hole and smooth out the dough around the hole, twist the dough on your finger or thumb. Allow bagels to rest for 10 minutes after covering with a clean cloth.
- Cornmeal should be sprinkled on an ungreased baking sheet. Transfer the bagels to the boiling water with care. 1 minute at a boil, rotating halfway through. Drain on a clean towel for a few minutes. On a baking sheet, arrange the boiled bagels. Glaze the tops with egg white and top with your favorite toppings.
- Bake for 20 to 25 minutes, until thoroughly browned, in a preheated 375°F (190°C) oven.
