Cottage Cheese Loaf I Recipe
This loaf is a family favorite since it is flavorful and delicious. When we ran out of other foods in the house, my mother came up with this one.

Ingredients:
- 1 onion, chopped
- ¼ cup vegetable oil
- 1 egg
- 4 cups crushed cornflakes cereal
- 1 (16 ounce) container low-fat cottage cheese
- ¼ teaspoon salt
- 1 cup milk
- 1 tablespoon olive oil
Directions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Using cooking spray, coat a 9x9 inch baking dish.
- In a medium skillet, heat 1 tablespoon of oil. Cook the onion until it becomes tender and transparent.
- Combine cottage cheese, cornflake crumbs, egg, oil, and sautéed onion in a large mixing basin. To moisten, gradually stir in the milk. It's possible that only 1/2 cup of milk is required; the mixture should be wet but not soupy.
- Spread the cottage cheese mixture into the prepared pan and bake for 30 to 40 minutes, or until bubbling and a knife inserted in the center comes out clean at 350 degrees F (175 degrees C).
