Oatmeal Cake II Recipe
This is a quick cake that may be served for breakfast or brunch.

Ingredients:
- 1 cup quick cooking oats
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¾ cup white sugar
- ½ cup butter
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- ½ cup raisins
- 1 teaspoon ground cinnamon
- 1 ¼ cups boiling water
- ½ teaspoon salt
Directions:
- Allow the quick oats to soak in the boiling water for 20 minutes.
- Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Grease one 13x15-inch baking pan lightly.
- Cream the shortening and sugar together until light and fluffy. Add the eggs and mix well. Then stir in the oats and vanilla extract.
- Combine the baking soda, salt, cinnamon, and flour in a large mixing bowl. Mix until everything is well blended. Coat the raisins in the flour mixture thoroughly.
- Stir together the raisin and flour mixture with the oatmeal mixture. Pour the batter into the pan that has been prepared.
- Bake for 25 minutes at 350°F (175°C) or until a tester inserted near the center comes out clean. If preferred, dust with confectioners' sugar or serve with whipped topping.
