This is a quick cake that may be served for breakfast or brunch.

Oatmeal Cake II

Ingredients:

  • 1 cup quick cooking oats
  • 2 eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ cup white sugar
  • ½ cup butter
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • ½ cup raisins
  • 1 teaspoon ground cinnamon
  • 1 ¼ cups boiling water
  • ½ teaspoon salt

Directions:

  1. Allow the quick oats to soak in the boiling water for 20 minutes.
  2. Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Grease one 13x15-inch baking pan lightly.
  3. Cream the shortening and sugar together until light and fluffy. Add the eggs and mix well. Then stir in the oats and vanilla extract.
  4. Combine the baking soda, salt, cinnamon, and flour in a large mixing bowl. Mix until everything is well blended. Coat the raisins in the flour mixture thoroughly.
  5. Stir together the raisin and flour mixture with the oatmeal mixture. Pour the batter into the pan that has been prepared.
  6. Bake for 25 minutes at 350°F (175°C) or until a tester inserted near the center comes out clean. If preferred, dust with confectioners' sugar or serve with whipped topping.
