Roast Beef with Coffee Recipe

Ingredients:
- 1 ½ cups prepared strong coffee
- ½ cup water
- 4 pounds chuck roast
- 2 tablespoons cornstarch
- 5 cloves garlic, minced
Directions:
- Preheat the slow cooker to low or the oven to 350 degrees Fahrenheit (175 degrees C).
- Make 5 or 6 deep incisions along the top and side of the roast with a sharp knife. Garlic cloves, entire, should be pushed down into the slits. Pour the coffee over the meat and place it in a slow cooker or a 10x15 inch roasting pan.
- Cook on low for 6 to 8 hours in a slow cooker OR bake for 2 to 3 hours at 350 degrees F (175 degrees C) in the oven.
- Remove the roast from the slow cooker OR the oven when it's done, and dump the drippings into a small saucepan over medium low heat. Combine the cornstarch and water in a separate small bowl. Stir well to combine, then gently pour into the drippings, stirring constantly. Simmer until the sauce has thickened.
