Cream of Broccoli Soup IV Recipe

This soup contains skim milk, but no one will notice unless you tell them. It's creamy and thick!

Cream of Broccoli Soup IV

Ingredients:

  • ¼ cup all-purpose flour
  • 1 clove garlic, minced
  • 2 ½ cups fresh chopped broccoli, steamed and divided
  • salt and pepper to taste
  • 3 cups skim milk
  • 1 ¼ cups chicken broth, divided
  • 2 tablespoons margarine

Directions:

  1. 1 cup cooked broccoli, garlic, and 1/4 cup chicken broth pureed in a food processor
  2. Melt the margarine in a large saucepan over medium heat. Stir in the flour until the mixture thickens and begins to color.
  3. Stir in the remaining 1 cup chicken broth and milk slowly. Allow 5 minutes for the mixture to thicken. The puree mixture and the remaining 1 1/2 cups cooked broccoli are then added. Allow to thicken for around 5 minutes after heating through. Salt & pepper to taste.
