Cream of Broccoli Soup IV Recipe
This soup contains skim milk, but no one will notice unless you tell them. It's creamy and thick!

Ingredients:
- ¼ cup all-purpose flour
- 1 clove garlic, minced
- 2 ½ cups fresh chopped broccoli, steamed and divided
- salt and pepper to taste
- 3 cups skim milk
- 1 ¼ cups chicken broth, divided
- 2 tablespoons margarine
Directions:
- 1 cup cooked broccoli, garlic, and 1/4 cup chicken broth pureed in a food processor
- Melt the margarine in a large saucepan over medium heat. Stir in the flour until the mixture thickens and begins to color.
- Stir in the remaining 1 cup chicken broth and milk slowly. Allow 5 minutes for the mixture to thicken. The puree mixture and the remaining 1 1/2 cups cooked broccoli are then added. Allow to thicken for around 5 minutes after heating through. Salt & pepper to taste.
