Dorsey's Fish & Oyster House Crab Cakes Recipe

Ingredients:
- 1 ½ teaspoons Old Bay Seasoning™
- 1 pound crabmeat
- 1 egg, beaten
- 1 tablespoon prepared mustard
- 2 tablespoons biscuit baking mix
- 1 tablespoon dried parsley
- 2 tablespoons mayonnaise
- 2 quarts vegetable oil for frying
- ¼ teaspoon Worcestershire sauce
Directions:
- In a medium mixing bowl, combine Old BayTM seasoning, baking mix, and parsley. Combine the dry ingredients with the mayonnaise, mustard, egg, and Worcestershire sauce. Gently fold in the crab flesh. Make 6 to 8 balls out of the mixture.
- In a big, heavy-bottomed skillet, heat 1 inch oil to 365 degrees F. (185 degrees C). Place the balls in the pan and flatten with a spatula. After 3 minutes, or when the crab cakes have browned on one side, flip them over. Continue to fry until everything is done. Using paper towels, absorb any excess liquid.
