Grilled Stuffed Portobello Mushrooms

Ingredients:

  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 4 portobello mushroom caps
  • ¼ teaspoon onion powder
  • ½ cup finely chopped red bell pepper
  • ¼ cup olive oil
  • 1 clove garlic, minced

Directions:

  1. Preheat the grill to medium.
  2. Combine the red bell pepper, garlic, oil, onion powder, salt, and ground black pepper in a large mixing bowl. Cover the gill side of the mushroom caps with the mixture.
  3. Grease the grill grate lightly. Cover and cook mushrooms for 15 to 20 minutes over indirect heat.
