Broccoli Crawfish Cheese Soup Recipe
This is a rich and delicious soup. Crawfish is my favorite, but shrimp will do just as well.

Ingredients:
- 1 (10.75 ounce) can condensed cream of chicken soup
- 8 ounces shredded Cheddar cheese
- 1 (10.75 ounce) can condensed cream of celery soup
- 2 cups milk
- ¼ cup margarine
- 4 cups fresh chopped broccoli
- Creole seasoning to taste
- 1 teaspoon hot pepper sauce
- ½ cup water
- 1 pound crawfish
- 1 tablespoon minced garlic
- 6 cups chicken broth
- 4 tablespoons cornstarch
- ¼ cup chopped onion
Directions:
- Combine the chicken stock and broccoli in a large pot over high heat. Cook for 3 to 5 minutes, or until the vegetables are soft. Remove from the equation. Sauté the onions in butter or margarine in a large skillet for about 5 minutes, or until gently browned. Combine the garlic, crawfish or shrimp, hot pepper sauce, and Creole spice in a large mixing bowl. Add the broccoli and broth after another 5 minutes of cooking.
- Combine the cream of chicken soup, cream of celery soup, and milk in a separate bowl. Combine the cornstarch with cold water, then stir it into the soup. Mix thoroughly. Combine the broccoli and broth in a mixing bowl. Cook, stirring regularly, until thick and bubbling over medium heat. Add the cheese and mix well. Reduce the heat to low and whisk until the cheese has completely melted. DO NOT BRING TO A BROIL.
