Taffy Apple Salad I Recipe
This salad is ideal for a summer picnic! This is a simple dessert that everyone will appreciate. I recommend cooking this the day before you plan to serve it because it can become runny if made the night before.

Ingredients:
- 1 egg yolk
- 1 tablespoon all-purpose flour
- 2 cups unsalted peanuts
- 4 large apples, cored and diced with peel
- 1 (8 ounce) can crushed pineapple, drained with juice reserved
- ½ cup white sugar
- 2 tablespoons cider vinegar
- 1 (8 ounce) container frozen whipped topping, thawed
Directions:
- Combine the flour, sugar, egg yolk, vinegar, and reserved pineapple juice in a medium saucepan. Cook over medium heat until the sauce has thickened. Remove from the heat and set aside to cool.
- Combine the pineapple, apples, peanuts, and chilled cooked mixture in a large mixing basin. Before serving, fold in the whipped topping and chill for at least 1 hour.
