This salad is ideal for a summer picnic! This is a simple dessert that everyone will appreciate. I recommend cooking this the day before you plan to serve it because it can become runny if made the night before.

Taffy Apple Salad I

Ingredients:

  • 1 egg yolk
  • 1 tablespoon all-purpose flour
  • 2 cups unsalted peanuts
  • 4 large apples, cored and diced with peel
  • 1 (8 ounce) can crushed pineapple, drained with juice reserved
  • ½ cup white sugar
  • 2 tablespoons cider vinegar
  • 1 (8 ounce) container frozen whipped topping, thawed

Directions:

  1. Combine the flour, sugar, egg yolk, vinegar, and reserved pineapple juice in a medium saucepan. Cook over medium heat until the sauce has thickened. Remove from the heat and set aside to cool.
  2. Combine the pineapple, apples, peanuts, and chilled cooked mixture in a large mixing basin. Before serving, fold in the whipped topping and chill for at least 1 hour.
