Cherry Chicken Salad Recipe
I attempted recreating this delectable take on Chicken Salad at home after dining at a bistro in Michigan around ten years ago. These days, cherries may be obtained online, making life much easier for those of us who live in areas where cherries are not frequently available. If buttermilk isn't available, regular milk can be used instead.

Ingredients:
- ⅓ cup low-fat mayonnaise
- 1 tablespoon buttermilk
- ⅓ cup diced celery
- 3 cooked, boneless chicken breast halves, diced
- ⅓ cup dried cherries
- ⅓ cup cubed apples (Optional)
- ½ teaspoon ground black pepper
- ½ teaspoon salt
- ⅓ cup toasted, chopped pecans
Directions:
- Combine the chicken, dried cherries, celery, almonds, mayonnaise, milk, salt and pepper, and apple, if preferred, in a large mixing bowl. Combine all ingredients in a large mixing bowl and toss well to combine. Refrigerate until chilled. Serve with croissants or toasted cracked wheat bread.
