Easy Fettucine Alfredo

Ingredients:

  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 8 ounces dry fettuccine pasta
  • ½ teaspoon dried basil
  • 1 pinch ground black pepper
  • 1 cup evaporated skim milk
  • 1 ½ lemons, juiced

Directions:

  1. Cook the pasta as directed on the packet. Drain and return to the pan right away. Toss in the olive oil to coat. Combine the evaporated milk, 1/3 cup Parmesan cheese, dried basil, lemon juice, and pepper in a mixing bowl. Cook, stirring regularly, over medium-high heat until bubbling. Add more Parmesan cheese and fresh basil on top.
