I'm not sure whether this is a regional meal or what... but no one I talk to has ever heard of it save my family... and most people behave as if it's completely bizarre... but it's extremely tasty and made with quite common stuff...

Ice Box Fruitcake

Servings Per Recipe: 14 Calories: 356.4

Ingredients:

  • 1 (12 ounce) package vanilla wafers, crushed
  • 1 cup chopped walnuts
  • 1 cup chopped pecans
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup chopped raisins
  • 1 (4 ounce) jar maraschino cherries, drained and chopped

Directions:

  1. Combine the pecans, raisins, walnuts, cherries, condensed milk, and vanilla wafers in a medium mixing bowl. The dough will be rather thick, so you'll have to work with your hands.
  2. On top of a dinner plate, form dough into a ring. Wrap in plastic wrap and/or aluminum foil in multiple layers. Allow for at least a week of aging in the refrigerator. The flavors will have time to mingle, and the milk will be completely absorbed by the cake.
