Mostaccioli with Spinach and Feta Recipe

Depending on what's available, I'll use mostaccioli or penne. I've served it both hot and cold.

Mostaccioli with Spinach and Feta

Servings Per Recipe: 6 Calories: 301

Ingredients:

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cups chopped tomatoes
  • 10 ounces fresh spinach, washed and chopped
  • 1 clove garlic, minced
  • 8 ounces tomato basil feta cheese
  • salt to taste
  • ground black pepper to taste

Directions:

  1. Cook the pasta as directed on the packet. Drain the water and set it aside.
  2. In a big pot, heat the oil. Cook and stir for 2 minutes, or until spinach is wilted and mixture is well cooked, before adding tomatoes, spinach, and garlic. Cook for 1 minute after adding the macaroni and cheese. Season with salt and pepper to taste.
