Mostaccioli with Spinach and Feta Recipe
Depending on what's available, I'll use mostaccioli or penne. I've served it both hot and cold.

Ingredients:
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 3 cups chopped tomatoes
- 10 ounces fresh spinach, washed and chopped
- 1 clove garlic, minced
- 8 ounces tomato basil feta cheese
- salt to taste
- ground black pepper to taste
Directions:
- Cook the pasta as directed on the packet. Drain the water and set it aside.
- In a big pot, heat the oil. Cook and stir for 2 minutes, or until spinach is wilted and mixture is well cooked, before adding tomatoes, spinach, and garlic. Cook for 1 minute after adding the macaroni and cheese. Season with salt and pepper to taste.
