Salsa, tortillas, refried beans, cheese, and onions make up this small meal pie.

5-Ingredient Mexican Casserole

Ingredients:

  • 1 (16 ounce) can refried beans
  • 1 cup salsa
  • 5 (10 inch) flour tortillas
  • ¾ onion, diced
  • 2 cups shredded Cheddar or Colby Jack cheese

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees C). Using nonstick cooking spray, coat a 9-inch pie pan.
  2. Cook refried beans and onions (to soften them) in a pot over medium-high heat for about 5 minutes.
  3. In the bottom of the buttered pan, place one tortilla. Spread approximately a third of a cup of the bean mixture on top. Over this, spread a couple tablespoons of salsa. Place another tortilla on top of the salsa and top with more bean mixture. Spread a large handful of cheddar equally over the beans. Repeat the layers, evenly distributing the ingredients across the tortillas. Make sure you put a lot of salsa and cheese on the top layer!
  4. Bake for 15 to 20 minutes, or until the cheese has melted.
