A Surprise-Inside French Toast Recipe
A fibrous fruit, such as 1/2 cup fresh raspberries, goes well with stuffed French toast with a creamy interior. Note: Because of the cheeses, this French toast is heavy in salt. If you can find no-salt cheeses, use them to make a lower-sodium recipe. You can also use orange, almond, or strawberry extract instead of vanilla. Ingredients:
- 2 teaspoons white sugar
- ¼ cup ricotta cheese
- ¼ cup evaporated milk
- ¼ cup cottage cheese, whipped
- 2 teaspoons vanilla extract
- 6 (2 inch thick) slices French bread
- 2 tablespoons lowfat cream cheese
- 3 cups egg substitute
Directions:
- Each slice of bread should have a pocket cut into it. Carefully open
- Combine the ricotta, cottage cheese, and cream cheese in a large mixing basin. Combine the sugar and flavoring extract in a mixing bowl and beat until smooth. Fill each bread pocket evenly with the mixture.
- Combine the egg replacements and milk in a mixing bowl. Dip the bread slices in the egg mixture.
- Over medium-high heat, heat a nonstick pan. Spray the pan with cooking spray. Cook the toast for 3 to 4 minutes on each side, or until golden brown.
