A Surprise-Inside French Toast Recipe

A fibrous fruit, such as 1/2 cup fresh raspberries, goes well with stuffed French toast with a creamy interior. Note: Because of the cheeses, this French toast is heavy in salt. If you can find no-salt cheeses, use them to make a lower-sodium recipe. You can also use orange, almond, or strawberry extract instead of vanilla. A Surprise-Inside French Toast

Ingredients:

  • 2 teaspoons white sugar
  • ¼ cup ricotta cheese
  • ¼ cup evaporated milk
  • ¼ cup cottage cheese, whipped
  • 2 teaspoons vanilla extract
  • 6 (2 inch thick) slices French bread
  • 2 tablespoons lowfat cream cheese
  • 3 cups egg substitute

Directions:

  1. Each slice of bread should have a pocket cut into it. Carefully open
  2. Combine the ricotta, cottage cheese, and cream cheese in a large mixing basin. Combine the sugar and flavoring extract in a mixing bowl and beat until smooth. Fill each bread pocket evenly with the mixture.
  3. Combine the egg replacements and milk in a mixing bowl. Dip the bread slices in the egg mixture.
  4. Over medium-high heat, heat a nonstick pan. Spray the pan with cooking spray. Cook the toast for 3 to 4 minutes on each side, or until golden brown.
