Ingredients:
- 3 tablespoons lemon juice
- 1 cup hot water
- 1 cup raisins (Optional)
- ½ cup white sugar
- 4 eggs, beaten
- 2 tablespoons butter
- 5 cups day-old bread cubes
- 1 cup white sugar
- 1 teaspoon ground cinnamon
- ½ cup butter, melted and cooled
- ½ teaspoon salt
- 4 cups scalded milk
- ½ tablespoon cornstarch
- 1 teaspoon ground nutmeg
- 1 tablespoon lemon zest
Directions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Using nonstick spray, coat an 8x11 inch casserole.
- Combine bread cubes, 1 cup sugar, salt, cinnamon, and nutmeg in a large mixing dish. If desired, add raisins.
- In a separate bowl, whisk together the milk, melted butter, and eggs. Mix together the wet and dry ingredients without turning the bread mixture into mush. Pour the ingredients into the casserole dish that has been prepared.
- In a bigger baking pan, place the casserole dish. Create a water bath by pouring hot water into the baking pan up to 1/3 of the way up the side of the casserole dish. Preheat oven to 350°F and bake for 45 minutes.
- Combine 1/2 cup sugar, cornstarch, 1 cup boiling water, 2 tablespoons butter, lemon juice, and lemon zest in a small pot. Cook over medium heat until the sauce has thickened and is bubbling. To avoid burning, continually stir. Serve alongside a bread pudding.
