Lenie's Herbal Fish Recipe

Baked with a choice of vegetables, fresh herbs, and any fish fillet. This fish recipe goes well with rice and creates a delightful supper!

Lenie's Herbal Fish

Ingredients:

  • 3 shallots, thinly sliced
  • ⅓ cup chopped fresh basil leaves
  • 3 onions, thinly sliced
  • ½ zucchini, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • ⅓ cup chopped fresh cilantro
  • salt and pepper to taste
  • ½ green bell pepper, sliced
  • 1 red bell pepper, thinly sliced
  • 1 large tomato, cubed
  • ½ (6 ounce) can black olives, halved
  • ⅓ cup chopped fresh chives
  • 2 pounds cod fillets
  • ½ yellow squash, thinly sliced

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C).
  2. In a big frying pan, heat the oil. Combine the onions, red and green bell peppers, and shallots in a mixing bowl. 3 minutes in the oven In a large mixing bowl, combine zucchini, squash, tomato, olives, and balsamic vinegar. Cook, stirring occasionally, until the vegetables are barely soft. To taste, season with salt and pepper.
  3. 1/2 of the vegetables should be spread out in an oiled 9x11 inch baking pan. Half a cup of herbs should be enough to cover the vegetables.
  4. Arrange the filets on top of the herbs and vegetables. Place the second half of the vegetables on top of the salmon and sprinkle the remaining herbs on top. Bake for 25 minutes with the dish covered with foil.
