Cucumber Sunomono Recipe
Cucumbers marinated in vinegar, sugar, salt, and ginger in a Japanese recipe. Delicious and easy to make!

Ingredients:
- ⅓ cup rice vinegar
- 1 ½ teaspoons minced fresh ginger root
- 2 large cucumbers, peeled
- 4 teaspoons white sugar
- 1 teaspoon salt
Directions:
- Cucumbers should be cut in half lengthwise and any large seeds should be scooped out. Cut into very thin slices crosswise.
- Combine the vinegar, sugar, salt, and ginger in a small bowl. Mix thoroughly. Place cucumbers in the bowl and whisk to evenly coat them with the mixture. Before serving, chill the cucumber bowl for at least 1 hour.
