Cucumber Sunomono

Ingredients:

  • ⅓ cup rice vinegar
  • 1 ½ teaspoons minced fresh ginger root
  • 2 large cucumbers, peeled
  • 4 teaspoons white sugar
  • 1 teaspoon salt

Directions:

  1. Cucumbers should be cut in half lengthwise and any large seeds should be scooped out. Cut into very thin slices crosswise.
  2. Combine the vinegar, sugar, salt, and ginger in a small bowl. Mix thoroughly. Place cucumbers in the bowl and whisk to evenly coat them with the mixture. Before serving, chill the cucumber bowl for at least 1 hour.
