Ingredients:

  • 1 teaspoon baking soda
  • 3 cups chopped apples
  • 1 ½ cups white sugar
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • ½ cup butter
  • 3 cups all-purpose flour
  • ½ teaspoon vanilla extract
  • 3 eggs
  • 1 cup chopped walnuts
  • 1 cup maraschino cherries, chopped

Directions:

  1. Preheat the oven to 325°F (165 degrees C). A 10 inch Bundt pan should be greased and floured.
  2. Cream together the oil, butter, and sugar in a medium mixing basin. One at a time, beat in the eggs. In a separate bowl, combine the flour, baking soda, and salt, and fold them into the egg mixture. Finally, combine the vanilla, apples, cherries, and walnuts in a large mixing bowl. Pour the batter into the pan that has been prepared.
  3. Bake for 75 to 90 minutes in a preheated oven, or until a toothpick inserted in the center comes out clean. Allow 10 minutes in the pan to cool before inverting onto a wire rack to cool entirely.
