My grandmother used this recipe, which she handed on to me in a box of old papers when she died. It's highly filling, therefore it's not for individuals watching their weight.

Chess Pie III

Ingredients:

  • ½ cup butter, melted
  • 1 tablespoon cornmeal
  • 1 (9 inch) pie shell
  • 1 teaspoon vanilla extract
  • 1 tablespoon distilled white vinegar
  • 3 eggs
  • 1 ½ cups white sugar

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C).
  2. Combine melted butter or margarine, eggs, and sugar in a medium mixing basin. Combine cornmeal, vinegar, and vanilla essence in a large mixing bowl. Stir until all of the ingredients are well blended. Fill the pastry shell with the mixture.
  3. Bake for 35 minutes, or until golden brown on top, in a preheated oven.
