Quick Coffee Cake Recipe

Ingredients:
- ⅓ cup shortening
- 2 tablespoons all-purpose flour
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1 ½ teaspoons baking powder
- ½ cup brown sugar
- 1 egg
- 1 ½ cups all-purpose flour
- ½ cup milk
- 6 tablespoons white sugar
- 2 tablespoons butter, melted
- ½ teaspoon salt
Directions:
- Preheat the oven to 425 degrees Fahrenheit (220 degrees C). A 9-inch square pan should be greased and floured.
- Combine the flour, baking powder, sugar, and salt in a large mixing bowl. Using a pastry blender, cut in the shortening until it is the size of small peas.
- In a separate small bowl, whisk together the egg, milk, and vanilla extract. All of the egg-milk mixture should be added to the flour mixture at the same time. Carefully stir until everything is well combined.
- Pour the batter into the prepared pan and smooth it out evenly. Drizzle melted butter over the top.
- Combine brown sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon in a small mixing dish. Sprinkle over the top of the cake. Bake for 15 to 20 minutes in a preheated oven, or until a toothpick inserted in the center of the cake comes out clean.
