Quick Coffee Cake

Ingredients:

  • ⅓ cup shortening
  • 2 tablespoons all-purpose flour
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • ½ cup brown sugar
  • 1 egg
  • 1 ½ cups all-purpose flour
  • ½ cup milk
  • 6 tablespoons white sugar
  • 2 tablespoons butter, melted
  • ½ teaspoon salt

Directions:

  1. Preheat the oven to 425 degrees Fahrenheit (220 degrees C). A 9-inch square pan should be greased and floured.
  2. Combine the flour, baking powder, sugar, and salt in a large mixing bowl. Using a pastry blender, cut in the shortening until it is the size of small peas.
  3. In a separate small bowl, whisk together the egg, milk, and vanilla extract. All of the egg-milk mixture should be added to the flour mixture at the same time. Carefully stir until everything is well combined.
  4. Pour the batter into the prepared pan and smooth it out evenly. Drizzle melted butter over the top.
  5. Combine brown sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon in a small mixing dish. Sprinkle over the top of the cake. Bake for 15 to 20 minutes in a preheated oven, or until a toothpick inserted in the center of the cake comes out clean.
